Water activity quantifies the active part of the moisture content or ‘free water’ as opposed to the total moisture content which also includes bound water. In products it influences its microbiological, chemical and enzymatic stability. If there is too much free water present, the products spoil and too little water can be detrimental to the product characteristics.
